Power up with Hemp Seed, Chia Seed, and Flaxseed!

 5 eggs
 ¾ cup cooked mashed sweet potato
 6 tbsp coconut oil
 1 tsp honey
 1 tbsp raw apple cider vinegar
 1 cup almond meal
  cup new hemisphere™ Hemp Seed Flour
 2 tbsp new hemisphere™ Hemp Seed Hulled
 2 tbsp chia seeds
 2 tbsp flaxseed
 1 tsp baking soda
 ½ tsp sea salt
To serve:
 Butter and chia seed jam

Preheat oven to 180°C Bake.

Grease and line a loaf tin with non-stick baking paper.

In a large mixing bowl, whisk the eggs and mashed sweet potato till smooth. Whisk in the coconut oil, honey and vinegar until combined. Do not over mix.

In another large mixing bowl, combine the almond meal, new hemisphere™ Hemp Seed Flour, seeds, baking soda, and sea salt. Stir with a fork to remove any lumps.

Gently fold the wet mixture into the dry. Do not over mix.

Transfer the mixture into the loaf tin and smooth the top with a spatula.

Bake for 45-50 minutes or until a knife/skewer inserted in the centre comes out clean.

Cool slightly then remove from loaf tin to cool completely on a wire rack or chopping board (1-2 hours).

To serve:

Slice and ENJOY with lashings of butter and chia seed jam.

If you prefer savoury - divide mixture into a 12-holed muffin pan and cook for 12-15 minutes and have with your favourite soup.
